This opportunity as a Sous Chef is with one of our subcontractors and plays a vital role in supporting the training of Canadian Army Personnel. Job Duties

Follows cyclical menus and recipes

  • Provide leadership to the culinary team; Professional service and communication directly with customers to ensure their satisfaction with the product, quality and variety of food.
  • Provide guidance to culinary team, including, food preparation, recipe adherence, record keeping, and station set up / replenishment
  • Prepare food for the dining facilities including preparation of soups, daily menus, specials of the day, vegetables, sauces, gravies, etc., and ensure primary preparation is completed for the following day
  • Ensure appealing presentation on all service stations.
  • Portion control instructions for servers
  • Responsible for the correct holding temperatures of food prior to and during service; ensures a first-in, first out food rotation system and verifies all food products are properly dated and organized for quality assurance
  • Placing orders with distributors for the supplies needed for production
  • Responsible for adequate levels of product for all shifts which includes; soups, daily menus, specials of the day, vegetables, sauces, gravies, etc.
  • Works with Head Chef to maintain kitchen organization, staff ability, and training opportunities
  • Promote and enforce health and safety regulations and promote safety awareness in workplace

Qualifications / Skills / Attributes

  • Red seal certification is an asset.
  • Minimum 2 years in a role as Sous Chef of a medium to large kitchen; volume cooking (200 – 1000 people), institutional cooking.
  • Highly effective communication skills.
  • Ability to direct and supervise small and large groups of employees.
  • Creativity.
  • Ability to follow standardized recipes and instructions, as well as to adapt them.
  • Exceptional organizational abilities.
  • Extended periods of time standing at workstations.
  • Ability to do lifting as required.
  • Able to work in a fast-paced environment.
  • General physical wellness, and ability to stand, lift, move, etc.

Pay Details

  • $27.00 per Hour.
  • Overtime pay available.
  • Signing bonus.

Schedule

  • Monday to Friday.
  • Weekends as needed.
  • Expected 40hrs per week.

Experience:

  • Cooking: 2 years (required).

Licence/Certification:

  • Red Seal (preferred).
  • Hold or achieve Food Safety Certification/Safe Food Handlers Certificate.
  • Hold or be able to achieve and maintain a Government of Canada Security Clearance to a minimum status of Reliability.

Work Location: 4th Canadian Division Training Centre – Meaford, ON
